The secret to the preservations from the store are two: If it is airtight, factory packaged, it often has nitrogen pumped into the bags, displacing the oxygen, cutting down on the oxidation. If it is deli-done, they generally dip it in citrus of some sort, quite often Mountain Dew. (Trust me; I was a professional! LOL!) You can use that when making your own.
What I wonder is how they keep those apple slices from browning. 🙂

Me, too because he got this on Saturday and they still are crisp and not brown. So crazy. Mine I cut brown in 27 seconds…

I’ve used lemon juice before. Didn’t really work too well. Interesting about the nitrogen.
